Fine dining and unique culinary ideas combine at Manchester city centre restaurant, The Rabbit.

Located in the iconic Urbis building and set above Manchester’s famous National Football Museum, the one-of-a-kind restaurant reopened its doors to the public at the end of March. It now boasts a more visually and technically impressive and ingredient-led menu. And not only that, the spaciousinterior has upped its game too. The refurbished space reveals enhanced elegant yet modern features, creating a sophisticated, but distinctive dining space.

Welcoming staff make guests feel right at home, whilst Restaurant Operations Director, Charlotte Rasburn, is at the forefront, and charming Chef John Granaghan heads up the kitchen with a professional and personable presence. Before making the move to The Rabbit, John worked at The Man Behind The Curtain in Leeds for two years, it was here that he gained exceptional culinary experience, which enabled him to create such a strong menu.

The new, bolder-tasting menu, which is open for dinner, and also lunch on Fridays and Saturdays, encapsulates intense textures and flavours whilst using only the very best ingredients. Set dishes include Yurzu Cured Mackerel with Black Sesame Ice Cream and Pickled Strawberries, Native Lobster with Thai flavours, Kung Pao Beef, and Roast Duck Breast with Singapore Noodles and Salt and Pepper Squid. To follow, delicious sweet servings on offer include Raspberry Cheesecake with Tarragon and White Chocolate and Juniper Donut.

The wine list available is an interesting mix of popular choices as well as a number of unusual bottles from countries such as England, China and Japan, which have been expertly chosen to pair flawlessly with the tasting menu.

Offering much more than just fine dining, The Rabbit feeds the demand for a progressive culinary experience in Manchester and the whole region.
